While their pasta with scratch sauces and homemade pizzas are the favorites of the customer, Tomatina has become best known for its signature piadine — a fresh, hot flatbread topped with crisp salad, ready to fold and eat. The caprese piadine with fresh-stretched mozzarella, basil pesto and oven-roasted tomatoes has been the best seller for almost 20 years.

About The Chef
Tomatina’s Executive Chef, Rogelio Jacinto, has helped to craft a wide-ranging Italian menu that takes a modern approach to traditional Italian recipes. Chef Jacinto has been working with Tomatina since its inception in 1997. He began his career at the prestigious Tra Vigne Restaurant in St. Helena, California, in 1989.
Chef Jacinto was named Executive Chef of Tomatina in 2002 and continues to play an integral part in the production of Tomatina ‘s menu and rotating specials. With a passion for fresh food prepared as he would at home; Rogelio is always eager to give Tomatina’s guests a memorable dining experience.
